Cherry wood has a Janka hardness rating between 950 lbf (4,200 N) and 995 lbf (4,430 N) depending on whether it is black or brazilian cherry. This makes it one of the strongest woods on the market when fully mature and the hardening process doesn’t even stop after it is cut, produced, and used in projects. Not to mention the fact that cherry wood’s self-healing qualities make it ideal for cutting boards as well as it repairs any knife scores made throughout the years to avoid rancid-smelling cutting boards, foodborne illnesses, and food contamination caused by trapped food particles.
