On the Janka hardness scale, Walnut ranks 1,010 lbf or 1,010 Janka. With this said, it is harder than cherry wood but not quite as hard as maple wood. Walnut also continues to get even more dense and durable with age as well as it is one of the woods that continues to harden after it is manufactured. This is why it is capable of daily use and potential water or fall damage without breaking, snapping, chipping, cracking, drying out, or warping along the way.
Walnut wood also has self healing properties that make it incredibly beneficial when used for cutting boards and butcher blocks specifically. With lower quality wood, plastic, or marble boards, deep grooves gradually form on the surface of the board which trap food particles and contaminate food leading to foodborne illness and food poisoning. However, with walnut wood, these grooves repair themselves which means this issue no longer is something to be concerned about with this far safer material.
