As the wood matures, it will also harden even further and self heal. Cherry wood has a Janka hardness rating between 950 lbf (4,200 N) and 995 lbf (4,430 N) depending on whether it is black or brazilian cherry. However, with time, this number will increase further and any grooves made by your knives on your board will heal naturally likewise. This is why this material is prized in the restaurant world as it serves as a long-lasting and highly cost-effective cutting board material.
